These Bran muffins will have your rustic valentine swooning!
Adapted from a Bob’s Red Mill recipe on the back of the package~ The replacement of walnut oil for vegetable oil is a nice dose of Omegas, the apple butter adds depth and the currents give little tangy pops. I also used whole wheat pastry flour which gives the muffins a much lighter texture while keeping it very healthy.
1 cup Wheat Bran
1 1/2 cups Whole Wheat Pastry Flour*
1 tsp. Baking Powder
1 tsp. Baking Soda
1 cup Organic 2% Milk
1/2 cup Molasses (I prefer full flavor)
3/4 cup Apple Butter
1/2 cup of dried currents**
2 Tbsp. Walnut Oil
2 Organic Eggs, beaten
Preheat oven to 400°F. Combine wheat bran, flour, baking soda and baking powder. In a separate bowl, blend apple butter, milk, molasses, walnut oil and eggs. Add to dry ingredients give a few turns then add dried currents and stir just until moistened. Spoon into greased muffin tin (or paper muffin cups) and bake for 15-20 minutes. Yields 18 *you can find whole wheat pastry flour at Whole Foods **Replace with raisins if you wish.
